Bromelain is the reason fresh pineapple breaks down proteins so effectively that it can 'digest' your tongue if you eat too much — causing the tingling sensation. Gelatin-based desserts cannot be made with fresh pineapple because bromelain denatures the gelatin proteins. Cooking or canning destroys the enzyme.
