Carrot
166% DV beta-carotene. Vision, skin, and immune function in one sweet root.

Carrot (Daucus carota) is the richest natural source of beta-carotene — the precursor to vitamin A. The body converts beta-carotene to retinol (active vitamin A) on demand, making carrots one of the safest ways to achieve optimal vitamin A status without risk of toxicity from preformed retinol.
Good for
- Eye health
- Skin
- Vitamin A for kids
Watch for
- Excessive intake (carotenemia)
Vision and eye health
Beta-carotene → RetinolVitamin A (from beta-carotene) is required for rhodopsin production — the light-sensitive protein in rod cells. Deficiency causes night blindness; adequate intake prevents it.
Skin health and UV protection
Beta-caroteneBeta-carotene accumulates in skin and provides mild photoprotection. It also supports skin cell turnover and gives skin a healthy colour at adequate intake levels.
Liver protection
Falcarinol, Beta-caroteneFalcarinol compounds in carrot have shown liver-protective and anti-tumour activity in animal studies. Carrot juice is traditionally used in Ayurveda for liver cleansing.

Beta-carotene bioavailability from carrots improves dramatically with fat and mechanical disruption. Cold-pressing releases beta-carotene from cellular matrices far more efficiently than eating raw carrot (estimated 40% increase in bioavailability). Adding a small amount of fat (e.g., coconut water or flaxseed) increases absorption by another 2–6×.

- Distance
- 12km

- Every 2 days
- Freshness
- Pressed within 24 hours of purchase
- Notes
- Deep orange varieties have 2–3× the beta-carotene of pale or yellow carrots. We select only deep orange.
Do
- Pair with a fat source for maximum beta-carotene absorption
- Year-round availability makes it a reliable daily ingredient
Don't
- Don't peel heavily — the outer layer has the highest nutrient density
- Don't over-consume in isolation — excess beta-carotene can cause carotenemia (orange skin), harmless but visible
The idea that carrots improve night vision originated from a British WWII propaganda campaign designed to conceal their development of radar. They claimed their pilots could see in the dark due to eating carrots. While carrots do support vision, the wartime story was deliberately fabricated.
