What it is

Carrot (Daucus carota) is the richest natural source of beta-carotene — the precursor to vitamin A. The body converts beta-carotene to retinol (active vitamin A) on demand, making carrots one of the safest ways to achieve optimal vitamin A status without risk of toxicity from preformed retinol.

Beta-carotene → Retinol

Vitamin A (from beta-carotene) is required for rhodopsin production — the light-sensitive protein in rod cells. Deficiency causes night blindness; adequate intake prevents it.

Beta-carotene

Beta-carotene accumulates in skin and provides mild photoprotection. It also supports skin cell turnover and gives skin a healthy colour at adequate intake levels.

Falcarinol, Beta-carotene

Falcarinol compounds in carrot have shown liver-protective and anti-tumour activity in animal studies. Carrot juice is traditionally used in Ayurveda for liver cleansing.

The science

Beta-carotene bioavailability from carrots improves dramatically with fat and mechanical disruption. Cold-pressing releases beta-carotene from cellular matrices far more efficiently than eating raw carrot (estimated 40% increase in bioavailability). Adding a small amount of fat (e.g., coconut water or flaxseed) increases absorption by another 2–6×.

Did you know

The idea that carrots improve night vision originated from a British WWII propaganda campaign designed to conceal their development of radar. They claimed their pilots could see in the dark due to eating carrots. While carrots do support vision, the wartime story was deliberately fabricated.
