What it is

Lemon (Citrus limon) is a citrus fruit used across every cuisine on earth, primarily for its vitamin C content and flavour. In cold-pressed juice, it serves both a nutritional and functional role: vitamin C for immunity and iron absorption, citric acid to preserve freshness, and limonene as an antioxidant.

Who should drink it

Good for

  • Immunity
  • Hydration
  • Iron absorption

Watch for

  • Active acid reflux or ulcers
What it does in your body
01

Iron absorption multiplier

Ascorbic acid

Vitamin C converts ferric iron (Fe³⁺) to ferrous iron (Fe²⁺), which is the form that absorbs through the intestinal wall. This is why lemon is paired with every iron-rich ingredient we use.

02

Immune system support

Ascorbic acid

Vitamin C is required for neutrophil function and the skin's barrier defence. Deficiency impairs immunity; adequate daily intake maintains baseline immune response.

03

Antioxidant and preservation

Ascorbic acid, citric acid

Citric acid and vitamin C both act as natural antioxidants in the juice, slowing oxidation and extending freshness without any added preservatives.

The science

A common misconception is that lemon juice is acidic, therefore 'bad' for digestion. In reality, the citrate in lemon metabolises to bicarbonate in the body, creating a net alkalising effect. The pH of lemon juice is 2–3, but its effect on urine pH (the measurable alkalising outcome) is consistently positive in research.

Best consumed

Do

  • Drink within 30 minutes of opening for maximum vitamin C (degrades with oxidation)
  • Room temperature is fine — cold doesn't preserve vitamin C, refrigeration does

Don't

  • Don't add sugar — defeats the alkalising benefit
  • Don't brush teeth immediately after — wait 30 minutes for enamel to remineralise
Did you know

The British Royal Navy mandated lemon juice for sailors from 1795 onwards to prevent scurvy — the first institutionalised use of a food-based health intervention in modern history. A daily dose of 10mg of vitamin C is enough to prevent scurvy; the recommended daily intake for optimal immune function is 65–90mg.
