A common misconception is that lemon juice is acidic, therefore 'bad' for digestion. In reality, the citrate in lemon metabolises to bicarbonate in the body, creating a net alkalising effect. The pH of lemon juice is 2–3, but its effect on urine pH (the measurable alkalising outcome) is consistently positive in research.

The British Royal Navy mandated lemon juice for sailors from 1795 onwards to prevent scurvy — the first institutionalised use of a food-based health intervention in modern history. A daily dose of 10mg of vitamin C is enough to prevent scurvy; the recommended daily intake for optimal immune function is 65–90mg.
