Beet kanji stacks two mechanisms in one 100ml shot: beetroot nitrates for blood flow and oxygen delivery, and live kanji cultures for gut flora support. The fermentation mellows the earthy beetroot taste and increases bioavailability of the phytonutrients.
Fermented beetroot has higher nitrate bioavailability than raw beetroot juice because the fermentation breaks down the cell walls. The pH drop also preserves the anthocyanins longer. Best drunk 90 minutes before exercise — or first thing if you're not timing a workout.
Fermented 48 hours at room temperature. pH tested before bottling. The deep ruby colour is natural — anthocyanins from beetroot, stabilised by the acidic fermentation environment.
