What it is

Beetroot (Beta vulgaris) is a root vegetable with one of the highest naturally occurring nitrate concentrations of any food. Its deep ruby colour comes from betalain pigments, which are also powerful antioxidants.

Who should drink it

Good for

  • Endurance and recovery
  • Healthy blood pressure
  • Liver detox

Watch for

  • Already low blood pressure
What it does in your body
01

Stamina and oxygen delivery

Inorganic nitrates → Nitric oxide

Dietary nitrates convert to nitric oxide via the nitrate-nitrite-NO pathway. Nitric oxide dilates blood vessels, reducing the oxygen cost of exercise and improving endurance.

02

Blood pressure support

Nitrates

Multiple meta-analyses show inorganic nitrate from beetroot reduces systolic and diastolic blood pressure by 4–5 mmHg — comparable to some antihypertensive medications.

03

Betalain antioxidants

Betacyanins, betaxanthins

The deep red-purple pigments in beetroot are betalains — a class of antioxidant found almost nowhere else in the plant kingdom. They combat oxidative stress at the cellular level.

The science

The conversion of nitrate to nitric oxide takes approximately 60–90 minutes and requires oral bacteria — which is why mouthwash before a beetroot drink can completely eliminate the effect. Research from the University of Exeter showed 500ml of beetroot juice reduced the oxygen cost of moderate-intensity cycling by 19% and increased time-to-exhaustion by 16%.

We use deep-red varieties only — golden beetroot has lower nitrate concentration.
Best consumed

Do

  • Drink 60–90 minutes before exercise for maximum nitric oxide effect
  • Avoid using antibacterial mouthwash before drinking — it kills the bacteria needed for conversion

Don't

  • Don't be alarmed by pink urine (beeturia) — harmless and common
  • Don't pair with high-calcium foods immediately before — can reduce nitrate absorption
Did you know

The pink or red discolouration of urine after eating beetroot, called beeturia, occurs in 10–14% of people and is completely harmless. It's caused by betalain pigments passing through the digestive system — how quickly it passes depends on your stomach acid levels.
