What is kanji?
Not a probiotic supplement. A traditional fermented drink that's been part of north-Indian winters for centuries.
Kanji is made by fermenting vegetables in water with mustard seeds — no commercial starter culture, no dairy. The native bacteria on the mustard seeds and vegetables do the work. We ferment for 48 hours at room temperature, then bottle and refrigerate immediately. pH tested before every batch leaves the kitchen.
